Chokeberry and apple juice
Ingredients (3–4 litres)
2 kg chokeberries
2 kg apples
1 kg sugar
a few handfuls of cherry leaves
Method
Pour water into the bottom pot of the steam juicer and place the juice container on top. Place the perforated steamer basket on top.
Put the chokeberries, chopped apples, sugar, and cherry leaves in the juicer in layers and cover with a lid.
Bring the water to a boil.
You can use higher heat at first, but once the water is boiling, lower the temperature slightly. In about 15 minutes, the juice will start to separate.
Wait for about a litre of juice to drain and pour it back into the steamer basket over the apples and chokeberries.
Continue steaming for 30–60 minutes until the chokeberries have changed colour and the apples have also released their juice.
Pour the juice into sterilised jars or bottles and seal hermetically.
Keep in a dark place without major temperature fluctuations.
