Homemade granola with a tropical smoothie

Granola is a crispy and tasty mix consisting of baked oatmeal, nuts, dried fruits and seeds. It is perfect for breakfast or dessert and is an excellent source of fibre, protein, vitamins and minerals.

Method

Granola

  1. Crush the nuts: put the nut mix in a food processor or blender and process until the nuts are crushed – do not leave whole pieces, but avoid grinding too finely.
  2. Mix the ingredients: transfer the crushed nuts to a bowl, add oatmeal, salt, oil and agave syrup. Stir thoroughly until the ingredients are evenly mixed.
  3. Cook the granola: spread the finished mixture evenly on a baking tray lined with baking paper. Bake in a 160-degree oven for 20–25 minutes, stirring the mixture a couple of times. When the oatmeal is golden brown and slightly crispy, remove it from the oven.
  4. Let cool: let the granola cool down to make it even crispier.

Smoothie

  1. Put the frozen mango cubes and strawberries in a blender jug, add the sliced banana and the coconut milk. Blend for 1 to 2 minutes until you get a smooth and silky texture.
  2. How to serve: divide the smoothie between four bowls, sprinkle the granola on top and garnish with banana slices. You will have a delicious and wholesome smoothie bowl.

Tips: add some fresh mint to the smoothie or substitute the coconut milk with plant-based yogurt to create new and interesting flavour combinations. You can add pistachios, walnuts, dried cranberries or pumpkin seeds, etc. to the granola mix if you like. Fresh berries such as blueberries and raspberries are also great for topping.
